We're heading out on vacation next week, so a million things need to get done and organized this weekend. Groceries got done, and the girls made it to gymnastics class on time (small miracles in our time).
Made it back through the door well past lunchtime and all I wanted was to laze in the sun. But as we neared the front door I was reminded that uncontrollable starvation hits my kids at precisely this moment. Fridge and cupboard doors are flung open, and a new level of scrounging ensues. "Mom, why don't you buy chips! We're STARVING!!!"
I kept the wolves at bay this time. It's at times like this that leftovers keep you healthy and quite frankly save you from watching your children eat popcorn and dry granola for lunch (it's happened before...I won't lie).
I had 2 fillets of salmon seasoned with Epicure Fish Rub from dinner last night. I used them to make salmon salad sandwiches for the girls, and topped a light citrusy salad with the other.
